Florent began his career at Le Havre, and starred in the UEFA European Under-16 Championships and the FIFA Under-17 World Championships before being signed by Liverpool at the age of 17. He was loaned back to his original club for two seasons, where he made 42 appearances. On returning to Liverpool, he made his debut in a UEFA Cup tie versus Ljubljana in October 2003, and a few days later scored his first goal in a 3-1 win over Leeds United. By 2004/05 he was appearing regularly in the first team, and was involved in the early rounds of Liverpool's Champions League run. He scored against Olympiakos in the Group Stages, as the club went on to famously lift the trophy.

After making over 60 appearances with Liverpool, Florent was loaned out to Premiership rivals Blackburn Rovers in January 2006 until the end of the season. He played a key role in the France team that reached the semi-finals of the 2006 UEFA European U21 Championship, and in August that year he signed a one year deal with newly promoted Spanish side Recreativo de Huelva. He finished as top scorer for the club in his first two seasons in La Liga, and in July 2008 he signed for Athletico Madrid in a deal believed to be around £8 million.

He scored four goals in his first five league matches, and appeared regularly for Athletico before moving on to Sporting Lisbon in the January 2010 transfer window. He later returned to Spain on loan, signing a year long deal with Real Zaragoza in August 2010, and then returned to his homeland in July 2011, on another year long deal with Saint Etienne. When his contract with Sporting Lisbon came to an end, he moved on to the Russian Premier League with FC Rostov for two years before signing for Chicago Fire in the USA in September 2014.

After a short spell with Swiss side Lausanne-Sport, the well travelled attacker arrived in Scotland for a trial spell at Tannadice before signing deal until the end of the season.
